Ingredients:
¼ cup low-fat Mexican cheese
2 tbsp Water
1 tsp organic olive oil
¼ tsp black pepper
2 eggs
¼ cup chunky salsa
Directions:

  1. In a bowl, combine the eggs with all the water, cheese, salsa and
    pepper and whisk well.
  2. Heat up a pan with all the oil over medium-high heat, add the eggs
    mix, spread in for the pan, cook for 3 mins, flip, cook for 3 more
    mins, divide between plates and serve enjoying.
