Ingredients:
4 oz spinach
2 oz chopped ham
½ cup non-fat milk
Cooking spray
6 eggs
1 cup crumbled low-fat cheese
½ cup chopped roasted red pepper
Directions:

  1. In a bowl, combine the eggs using the milk, cheese, spinach, red
    pepper and ham and whisk well.
  2. Grease a muffin tray with cooking spray, divide the muffin mix,
    introduce within the oven and bake at 350 0F for around 30 mins.
  3. Divide between plates and serve enjoying.
