1 tsp olive oil
1 tsp chopped fresh basil
1 medium chopped tomato
¼ cup Swiss cheese
½ tsp cayenne pepper
½ cup chopped packed spinach
- In a small bowl, whisk well eggs, basil, pepper, and Swiss cheese.
- Place a medium fry pan on medium fire and heat oil.
- Stir in tomato and sauté for 3 mins. Stir in spinach and cook for 2
mins or until starting to wilt.
- Pour in beaten eggs and scramble for 2 to 3 mins or to desired
