Ingredients:
1 tsp olive oil
1 tsp chopped fresh basil
1 medium chopped tomato
¼ cup Swiss cheese
2 eggs
½ tsp cayenne pepper
½ cup chopped packed spinach
Directions:

  1. In a small bowl, whisk well eggs, basil, pepper, and Swiss cheese.
  2. Place a medium fry pan on medium fire and heat oil.
  3. Stir in tomato and sauté for 3 mins. Stir in spinach and cook for 2
    mins or until starting to wilt.
  4. Pour in beaten eggs and scramble for 2 to 3 mins or to desired
    doneness.
